WILD DEER gathering 

overview

A full day with a deer at Wilderlands in East Sussex.

Many of us long for a deeper connection to our food and how it is produced.

We live in a time of rapidly expanding ecological awareness. We are right to be concerned for ourselves and the environment, after all we are a part of this land and not separate from it. 

​

Join me to explore this material through my own deep relationship with the deer of the Sussex Weald.

This day is very 'hands-on'.

On a practical level we will lean into many of the skills necessary to skin, butcher and cook local wild venison. 

I also believe in a personal practice of gratitude and reciprocity is essential to maintaining a healthy balanced approach.

We will also explore this important element, stepping into the role of guardian and caretaking as we gather.

Things we will cover:

• UK Deer species I.D.

• Local deer population and  management;

• Hygiene, safety and tools;

• Skinning the deer from a skin tanners viewpoint;

• Breaking down the carcass: Primal Cuts;

• Further butchery: Sub-primals and seam butchery;

• Cooking and preserving your meat.

We welcome all dietary persuasions and choices.

We  provide Vegan side dishes along with the venison we butcher on the day.

​

There will be plenty of venison to take home if you wish to.

Suitable for adults and accompanied 13+ teens.

​

Cost for the day is £100 per adult and £80 per teen.

( 13+ teens must be accompanied by a paying adult ).

​

The day will run from 0900 to 1600 to give us plenty of time.

The group will be no more than 10 to ensure you have my full attention.​
